Twix Brownies


INGREDIENTS:
4 ounces unsweetened chocolate; coarsely chopped
3/4 cup unsalted butter, cut into cubes
1 1/4 cups sugar
3 large eggs
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup all-purpose flour
12 Fun Size Twix Bars, each cut into thirds

For the Caramel
10 individually wrapped caramel candies (I used Kraft)
2 tablespoons heavy cream

DIRECTIONS:
1. Preheat oven to 350 degrees. Line an 8×8 inch baking pan with foil and spray with nonstick cooking spray.
2. Microwave chocolate and butter in a large bowl microwave-safe bowl at medium (50% power) for 3-4 minutes or until butter is melted.
3. Stir until chocolate is melted. Whisk in sugar, eggs, vanilla and salt. Gradually add in flour; stir until just combined.
4. Spread 1/2 the batter into prepared pan. Add an even layer of chopped Twix candy bars and cover with remaining 1/2 of brownie batter. Bake for 30-35 minutes; do not over bake.
5. Remove to cooling rack to cool completely. Just before serving, cut brownies and prepare the caramel sauce.
6. To make the caramel, place the caramels and heavy cream in a microwave-safe bowl. Microwave on 50% power in 30-second increments until the caramels begin to melt; stir frequently. Continue warming and stirring the caramels until you have a smooth, creamy mixture. Drizzle over each brownie and serve immediately.
* The brownies are very fudgy, make sure you allow them to cool completely before cutting into them.

Intergalactic LIGHTS!

HEY! I'm pretty much freaking out right now because I got 5 tickets to see LIGHTS at Great American Music Hall in San Francisco! She posted her new US tour dates on http://music.iamlights.com/tour/

I wanted to start this post off by saying that my mainstream music predictions have been pretty spot on this year. I posted "Call Me Maybe" in February, and then it suddenly skyrocketed! I also predicted that Sammy Adams would grow in popularity, and he has since he released "Only One". Usually, I'm very against mainstream music, because it's meaningless.
Regardless, I love Marina and The Diamonds! I'm excited to see that they're gaining popularity on the song Primadonna. Check them out! You'll find something you love!

Be Healthy Summer Through Fall!

Hello! This summer landmarked myself starting to make healthy choices for my body. I want any girl out there to know that eating healthy is not impossible, but that skinny doesn't equal beautiful. (Men don't want the body of a 10 year old boy!). It seemed that every time I ate a chocolate, I would beat myself up about it later. Luckily, I pulled myself together and snapped out of it. I have lost 15 pounds this summer, so know that eating healthy and exercise can change your life!

Never deprive yourself! Indulge when the moment is right. You only live once! Enjoy yourself!

Ingredients:2 tbsp. olive oil1/2 cup chopped yellow onion2 green onions, white and green parts, chopped1 (10-oz.) package frozen chopped spinach, thawed and drained2 eggs, lightly beaten2 tbsp. freshly grated Parmesan cheesePlain dry bread crumbs1/4 tsp. grated nutmeg1 tsp. kosher salt1/2 tsp. ground black pepper1 cup small-crumbled feta cheese2 tbsp. toasted pine nuts, chopped12 sheets frozen phyllo dough, defrosted6 tbsp. unsalted butter, melted
Directions:
Preheat the oven to 375 degrees F.  
Heat the olive oil in a medium sauté pan, add the onion, and cook for 5 minutes over medium-low heat.  Add the green onions and cook for another 2 minutes until they are wilted but still green.  Meanwhile, add the thawed and drained spinach to a large mixing bowl.  When the onions are done, add them to the bowl.  Mix in the eggs, Parmesan cheese, 1 1/2 tablespoons bread crumbs, nutmeg, salt and pepper.  Gently fold in the feta and the pine nuts. 
Place one sheet of phyllo dough flat on a work surface.  Brush the dough lightly with butter.  Working quickly, place another sheet of phyllo on top of the first, and brush it lightly with butter.  Continue this process until you have a stack of 4 sheets of phyllo.  Cut the stack of phyllo in half lengthwise (I found a pizza cutter useful for this step).  Place 1/3 cup of the spinach filling on the shorter end and roll the phyllo up diagonally as if folding a flag.  Then fold the triangle of phyllo over straight and then diagonally again.  Continue folding the first diagonally and then straight until you reach the end of the sheet.  The filling should be totally enclosed.  Continue assembling phyllo layers and folding the filling until all of the filling is used.  Place on a sheet pan, seam sides down.  Brush the tops with melted butter, sprinkle with flaked salt (I used kosher) and bake for 30-35 minutes, until the phyllo is browned and crisp.  Serve hot.

Back for a Day

Hello! I just got back from an out-of state softball tournament, so I apologize for not being able to post. As it turns out, tomorrow I catch a flight to Massachusetts for a 16 day vacation, so I'll try my hardest to post but its really unlikely I'll have a lot of free time. Sorry about this.
